Our Chocolate
What does the % of cacao indicate and why should I care?
If you are eating dark chocolate for its potential health benefits, doctors recommend that you eat chocolate containing at least 70% cacao. A higher percentage of cacao indicates a more intense chocolate flavor. For example, in Chocolate Prescription, the 72% cacao content is made up of cocoa butter and chocolate liquor with the remaining 28% made up of sugar, vanilla, and other ingredients.
Is the fat in chocolate bad for me?
The fat in chocolate, from cocoa butter, is comprised of equal amounts of oleic acid (a heart-healthy monounsaturated fat also found in olive oil), stearic and palmitic acids. Recent studies have shown that stearic acid, one of the primary saturated fats found in chocolate, behaves differently than other saturated fats. In fact, the studies show that stearic acid has a neutral effect on blood cholesterol levels.
What is lecithin and why is it in my chocolate?
Lecithin is a natural emulsifier derived from soybeans. It is added to chocolate to help prevent the cocoa butter from separating from the cocoa mass.
What about nut allergies?
Although our chocolates do not contain nut or nut by-products, some equipment used in the production of our chocolates may, at times, also be used to produce other chocolates which may contain nuts or nut by-products. If you have a nut-based allergy, we strongly advise you not to eat Chocolate Prescription unless your treating physician advises that it is safe to do.
What’s the best way to store Chocolate Prescription?
Chocolate Prescription should be stored in its original wrapping in a cool, dry, airy place away from direct sunlight or heat source. It should be stored at around 60-64 degrees Fahrenheit. If you keep it at this temperature, it will have a shelf life of about a year or longer. Do not leave chocolates near a window or on a place setting out in direct sun even if it is cool outside.
Since chocolate is notorious for absorbing odors, do not store it in any container or near any items that might impart an odor. Avoid storing chocolate in the refrigerator and do not freeze the chocolate because it will have a greater tendency to bloom when it is thawed. Chocolate bloom is the white or gray "clouds" or "blooms" on the surface of the chocolate that occurs when chocolate has been exposed to wide changes in temperature. Although it may look unpleasant, you can still enjoy bloomed chocolate.
What should I do when I receive my Chocolate Prescription and it seems warm?
When you receive your package, if it seems a little warm, but the chocolates are intact, put them in a cool, dry place and leave them undisturbed until they have come to room temperature.
I want to take my Chocolate Prescription to a friend’s house, what’s the best way to transport it?
If you need to transport your Chocolate Prescription when it's warm, put the box in an ice chest or thick box, place a towel or bubble wrap on the box of Chocolate Prescription and put and ice pack or frozen water bottle on top.

Shipping
Won't chocolate melt in shipping during the summer months?
We do everything possible to safeguard against melting. We provide gel ice packs, which turn your box into a refrigerator! Unfortunately, it won't protect against the heat for longer than one day, so you will need to select overnight shipping. Also, we will only ship out orders that can melt on days that will keep the product from sitting in a hot UPS hub or truck, thus defeating the purpose of you paying extra for shipping.
